Soft Almond Flour Biscuits are a sweet, low-carb gluten-free treat that can be made whenever a quick, simple dessert is needed.

  1. Preheat oven to 175-180 degrees Celsius. Line a baking sheet with parchment paper.
  2. In a bowl, combine almond flour, butter, egg, sweetener, vanilla extract, and cinnamon.
  3. From the resulting glutinous dough, shape into balls with a diameter of about 2.5 cm. You should make about 24 balls, which makes 24 cookies (2 cookies per serving).
  4. Place the balls of dough on the prepared baking sheet, leaving a few cm between adjacent balls.
  5. Press down on the dough balls with a fork, forming flat cookies and criss-cross pattern. Garnish with almonds if desired.
  6. Bake the cookies in the preheated oven until golden brown, 12 to 15 minutes. Chill on a baking sheet for 1 minute, then transfer to a wire rack or flat dish until completely cooled.
