Prepare rice: 1.5 cups of water to 0.5 cups of rice. Cook until water is completely absorbed, then remove from heat and set aside for a while.
Peel the carrots and cut into small cubes, cut the peppers as well. Heat 0.5 tbsp. olive oil in a frying pan and add carrots, peppers, a little chili, drizzle with soy sauce and cook for a few minutes.
Crush the garlic, chop the ginger. Add everything to the pan and lightly fry for a few minutes.
Chop the cabbage leaves, add to the pan and drizzle lightly with oil. Stir and cook for about 10 minutes.
Chop the mushrooms and add to the pan. Cook for a couple of minutes.
Chop the onion and add to the pan along with the pumpkin and sesame seeds. Cook for a couple more minutes and add rice, then some soy sauce. Simmer until the rice has absorbed all the juices, add herbs to taste.
