A lovely Turkish street food dish. In Istanbul, it is prepared directly on fishing boats from freshly caught mackerel.

  1. Cut each mackerel into 2 fillets, cut from the skin and carefully remove all bones with tweezers. Season with salt and pepper, let sit for 5 minutes.
  2. Cut the buns lengthways, not all the way, so that they open like a book. Drizzle lightly with olive oil inside. Cut the tomato into thin circles, salt and pepper.
  3. Grill the mackerel fillets on both sides (you can use a grill pan). The fillet should have a golden brown crust, but it should not fall apart. Put the fillet in a cut bun, pour with lemon juice, put tomato circles on top, lettuce leaves on top. Serve immediately
