Barley Porridge with Vegetables

  1. Rinse the pearl barley thoroughly, add 1 liter of water and leave to soak for a couple of hours. Then drain and boil in 1 liter of salted water until tender. While the barley is boiling, cook the vegetables.
  2. Wash carrots, peel, grate on a coarse grater. Peel the onion, cut into half rings. Heat the oil in a frying pan and fry the carrots over medium heat, then add the onions and, stirring, fry for 4-5 minutes until half cooked.
  3. When the onions and carrots are soft and lightly browned, add the tomato paste, stir, season with salt and cover. Simmer for another 5-7 minutes on low heat, stirring occasionally.
  4. When the barley is ready, add the fried vegetables to it, stir and serve. Sprinkle with chopped herbs if desired.
