Beetroot, Tangerine and Avocado Salad with Poppy Dressing

  4. Fry the pistachios in a dry skillet, about 3 minutes.
  5. For dressing, combine all ingredients in a screw-top jar and shake well to form an emulsion.
  6. Place the lettuce leaves in a large bowl. Add tangerines, avocados and beets. Toss the salad with the dressing, then add the toasted pistachios and feta.
