  1. Preheat oven to 200 ° C. Line a baking sheet with parchment paper or a silicone mat. Combine whole tomatoes, olive oil, brown sugar, carrots, and shallots in a large bowl. Season with salt and pepper to taste. Place vegetables on a baking sheet and bake until caramelized, about 30 minutes. Place the soup pot over medium heat. Add butter and heat until frothy. Add the red pepper flakes and garlic and cook for 1 minute. Add tomato paste and cook, stirring occasionally, for 1-2 minutes, then add sherry.
  2. Simmer until all liquid and alcohol has evaporated, 1-2 minutes. Add baked vegetables, shredded tomatoes and 1 tbsp. chicken broth. Season with salt and pepper to taste, bring to a boil and cook for 15 minutes. Working in small portions, pour the soup into a blender and beat until smooth. Then return it to the pot and add more chicken stock, adjusting the consistency to your liking. Taste again and add salt if necessary. Pour into bowls and serve with garlic croutons.
