Black Forest cake is a combination of chocolate sponge cake and sour cream with cherry flavor. An obligatory ingredient in the Black Forest cake is canned cherries, which not only decorate the cake, but also make a small layer of them.

In a saucepan, boil 0.75 cups of water, add half of the chocolate and cook, stirring occasionally, until the chocolate is completely dissolved. Cool slightly.
  2. Add liquid chocolate to sifted flour, stir until smooth. Add whipped egg whites and mix gently.
  3. Preheat the oven to 180 ° C. Place the dough in a 21 cm diameter detachable dish, greased with butter and lined with parchment. Place in the oven and bake for 20–25 minutes. Let stand in the form for 10 minutes, then transfer to a wire rack and cool completely.
  4. Prepare the cream. Beat half of the sour cream, gradually adding the remaining icing sugar and cherry liqueur. While whisking, add the swollen gelatin and the remaining sour cream.
  5. Cut the cake into 3 pieces. Put canned cherries on one part, grease with one third of the cream. Place the second cake on top and brush it with the same amount of cream. Cover with the third cake layer.
  6. Apply the remaining cream on top and on the sides of the cake. Grate 50 g of chocolate and sprinkle on top. You can decorate the cake with whipped cream roses and candied cherries. Refrigerate for 2 hours before serving.
