  1. Let's start with vegetable broth. Rinse vegetables and herbs well. Chop the onions, carrots and celery into large pieces and leave the thyme intact. Put all the ingredients in a saucepan, cover with water (so that it completely covers the vegetables) and cook for 30-40 minutes over medium heat. Strain the finished broth through a sieve.
  2. Cut fresh carrots into rings and boil until half cooked. Put the buckwheat to cook. One glass of buckwheat will require 2 glasses of water.
  3. While the groats are boiling, it's time to cook the fish. Dry the steaks of the black grenadier with paper towels, salt and roll in flour. Fry on both sides in olive oil for 3-4 minutes until golden brown.
  4. Add butter and pour in wine. After the butter has melted, add the broth, which should cover the steak by half. Cover and simmer over medium heat for 3-4 minutes. Turn steak, add stock and add carrots. Cook the dish until the sauce evaporates (until the sauce thickens).
  5. First put the buckwheat on a plate (you can use a special ring), then the finished steak. Spread the sweet carrots in a circle and generously pour the sauce over the dish.
