  1. Pour 4–5 cups of boiling water over the buckwheat, season with salt, cover and cook over low heat for 25 minutes.
  2. Pour soy milk or nut milk into another saucepan at the same time. Add chopped cinnamon sticks. Bring to a boil over low heat, add honey, turn off the heat, close the pan with a lid and leave while the buckwheat is boiling.
  3. Spread the buckwheat on deep bowls, pour spiced milk through a strainer. Serve additional honey or sugar.
