This sauce is served as an accompaniment to vegetables, fresh or grilled, to meat or simply toasted bread, as well as an independent snack or light lunch. In addition, tzatziki (aka dzadzyki and half a dozen other Russian spellings) serves as an excellent reminder of how delicious and beautiful it is in Greece, where, as you know, there is everything!

  1. Peel the cucumbers and rub them on a fine grater. Put the grated cucumbers on a kitchen towel and squeeze well. Transfer the cucumbers to a bowl and season with salt.
  2. Finely grate the garlic there, put the yogurt, pour in the vinegar and mix. Pour in the oil and mix again. Refrigerate for 1 hour. Serve cold.
