  4. Combine flour with semolina, baking powder, baking soda and salt. Pour this mixture into the egg mass and stir gently with a spatula from bottom to top.
  5. Pour the dough over the apples and place the charlotte in the bottom third of the oven. Bake until tender (if you stick a wooden skewer into the finished charlotte, it will come out dry), about 40–45 minutes. Cool before serving, remove from the mold and sprinkle with powdered sugar.
