Cheese Lazy Dumplings

Gouda cheese can be replaced with emmenthal or good feta cheese.

  1. Peel and grate the garlic. Mix with cottage cheese, egg, yolk, Provencal herbs, paprika, pepper and salt. Grind with an immersion blender into a smooth paste.
  2. Gouda cheese on a fine grater, stir into the curd mixture along with semolina and flour. You will have a firm dough. Cover it with plastic wrap and refrigerate for 30 minutes.
  3. Sprinkle flour on the board, roll a few sausages with a diameter of 2.5-3 cm from the curd-cheese dough.
  4. Bring water to a boil in a wide saucepan (about 2 L) and season with salt. Dip a knife into boiling water, cut off 2 cm wide pieces of sausages and throw them into a saucepan. Cook until float, about 4 minutes. Serve with yogurt and tomato sauce, garnished with basil.
