Cherry and wild rice salad

  1. Chop the shallots and cut into thin rings.
  2. Heat some olive oil in a skillet and fry the shallots over medium heat until golden brown and soft.
  3. Cut the cherries in half and remove the seeds from them.
  4. Cut the cheese into small cubes.
  5. In a deep bowl, combine the arugula, rice, cheese, onions and cherries.
  6. In a separate small container, combine olive oil, balsamic vinegar, salt and pepper.
  7. Season the salad with the resulting sauce and send it to the refrigerator to cool slightly before serving.
