Chicken Baked in Mediterranean Style

As the main New Year's meal, I suggest cooking Mediterranean-style baked chicken.

Ingredients

  1. Grate the chicken (about 1.5 kg) with a mixture of salt and pepper, you can make cuts and stuff the chicken with garlic. I grow fresh sage, I associate it with the aroma of Italian cuisine (except for basil, of course), knead the sage with your fingers and grate. Pour olive oil over the chicken. Leave to marinate at least overnight.
  2. Wash and peel the potatoes. And cook until half cooked.
  3. Place the chicken in a baking dish and cover with foil. Bake for 40 minutes at 180 degrees. I put it on convection mode.
  4. Remove the foil, place the potatoes with the chicken and put them in the oven for another 20 minutes, every 3-5 minutes pouring the fat soaked in herbs and oil over the potatoes and chicken. Served with olives and bright vegetables.
