Chicken soup with turnips and chickpeas

Ingredients

  1. Heat the coconut oil in a large skillet over medium-high heat. Add ginger and garlic; cook for 3 minutes, until the ginger softens and the garlic changes color. Add the turnips and kale and cook, stirring occasionally, for about 4 more minutes, until the cabbage leaves droop.
  2. Add turmeric and 1/2 teaspoon each. salt and pepper; mix thoroughly. Add chicken stock and 3 tbsp. water. Bring to a boil, then reduce heat and simmer for about 10 minutes, until turnips are tender.
  3. Add the chickpeas and chicken to the pot. Increase heat and bring soup to a boil. Cook for another 5 minutes. Season with salt, pepper and lemon juice to taste. Serve with whole grain naan tortillas.
