Chickpea Soup with Pumpkin

Who is nut? Chickpeas are a super-rich in minerals and vitamins bean, which for some reason is not very popular in our area. But in vain! We will correct this matter and start with a simple soup!

Ingredients

  1. Soak a glass of chickpeas, ideally overnight. For 1 cup of chickpeas, you need 4 cups of water. Then rinse the chickpeas, take a full pot of water (based on a pot of 3 liters). Boil the chickpeas until tender, about an hour and a half.
  2. Cut the pumpkin into cubes and add to the chickpeas.
  3. Then add chopped potatoes, onions and carrots.
  4. Cook everything together until the vegetables are soft.
  5. Puree the contents of the pan with a blender, salt and pepper to taste. Add 1 tsp. olive oil.
  6. Cook the soup for another 10 minutes. When serving, decorate with greens! Bon appetit!
