A terrific puree pea soup that requires no boiling and is great for the summer heat. Green peas are chopped in a blender along with vegetable broth, lemon juice and olive oil and served chilled with chunks of spicy crab meat and finely chopped mint. Mint combined with lemon gives the soup an even more refreshing taste. Sort out natural crab meat beforehand so that there are no shell fragments left in it. Serve pea soup in clear glasses for an eye-catching home party snack.

  1. Make soup. Combine the peas and vegetable broth in a blender bowl and blend until smooth. Without stopping the blender, slowly pour in the olive oil until the mixture becomes an emulsion. Add half the lemon juice, then refrigerate the soup for 1 hour. Season with salt to taste and drizzle with the remaining lemon juice.
  2. Cook crab meat. Combine olive oil, sambal-olek sauce and lemon juice in a bowl. Stir in crab meat with mint and add a pinch of salt. Fill small cups or glasses about three-quarters with chilled pea soup. Garnish each serving with 1 tbsp. l. with a heap of spicy crab meat and serve immediately.
