Chocolate biscuit roll with chocolate cream and peach jam

A chocolate cream biscuit roll is quicker and easier to prepare than a cake, and tastes just as good.

Ingredients

Directions

  1. Beat eggs with salt for 2 minutes until foamy.
  2. Add sugar. Beat eggs with sugar for 15 minutes! Don't shake less!
  3. Preheat the oven to 180 degrees (top-bottom mode).
  4. Add the sifted flour with cocoa in two steps. Gently, from the bottom up, mix the dough with a spatula.
  5. Add melted (chilled) butter. Pour it gradually along the wall of the bowl, stirring the biscuit dough.
  6. Pour the batter onto a baking sheet lined with parchment paper and spread evenly.
  7. We bake a biscuit in a preheated oven at 180 degrees for 10 minutes.
  8. We take out the biscuit cake from the oven, turn it over on a clean towel, remove the paper.
  9. We turn the hot cake together with a towel into a roll. We leave to cool.
  10. Cooking cream. To do this, mix condensed milk, egg yolk, vanilla sugar and water. Boil over low heat, stirring constantly, until the consistency of condensed milk.
  11. Strain through a fine sieve and set aside.
  12. Beat soft butter until creamy.
  13. Add chilled cream and beat everything.
  14. Add cocoa powder, mix.
  15. We collect the roll. We unfold the biscuit roll and apply a thin layer of jam on the cake (I have peach, you can try other flavors).
  16. We apply cream on top. We roll up a biscuit roll with chocolate cream and jam.
  17. We send the chocolate roll to the refrigerator.
  18. We prepare the glaze: melt butter, dark chocolate and honey in a water bath or in the microwave (all products are at room temperature). Mix until smooth.
  19. Drizzle the roll with chocolate icing.
  20. We send the chocolate roll to the refrigerator to cool.
  21. You can then sprinkle it with powdered sugar.
