Citrus "Pizza" on Cookies

And not a pie, and not a cake, and in general, not a pizza, although visually similar. And what's the difference what it will be called if it's very tasty, right? You can choose the filling for the "pizza" according to your own taste - we like pink grapefruits more, although it turns out well with red oranges too.

  1. For the base, squeeze the juice from 2 grapefruits or 3 oranges, strain and cook with sugar in a heavy-bottomed saucepan over medium heat until a thick syrup is obtained, about 10 minutes.
  2. Soften the oil. Use a rolling pin or crush to crush the cookies in a towel or bag and mix the crumbs with soft butter. Put the resulting mass in a split form, pressing down with your fingers so that an even layer is obtained, and put in the refrigerator.
  3. For the cream, grind the hazelnuts in a blender or food processor. Place the nuts and sugar in a saucepan with milk and bring to a boil. Dilute in 1 tbsp. l. cold water starch, add to the milk-nut mass and stir until thickened. Remove from heat and cool. When the cream has cooled, cover the cookie crust with it.
  4. Peel the remaining grapefruits (oranges) from the peel and films: with a sharp knife, cut off the peel along with the white part, cut the pulp into slices, dry with a paper towel and spread evenly over the cream.
  5. Pour citrus syrup over the “pizza”, garnish with chocolate chips and refrigerate for 2 hours.
