  1. Whisk the whites until firm peaks. Add the zest and lemon juice at the very end. Mix almond flour with sugar. Then mix both mixtures gently.
  2. Wrap the finished dough in foil and refrigerate for an hour.
  3. Roll out the dough 0.5 cm thick on a surface sprinkled with powdered sugar. Cut out half moons with a mold (each time dip the mold in powdered sugar so that it does not get stuck in the dough) and transfer to a baking sheet lined with parchment. Bake in an oven preheated to 160C for 15-20 minutes.
  4. Mix the icing sugar and lemon juice thoroughly. Apply the resulting glaze with a thin layer on completely cooled cookies, let dry.
