  1. Preheat oven to 160 ° C. Line a rectangular muffin pan with parchment so that the edges of the paper are higher than the sides of the pan.
  2. Sift flour, baking powder, and salt into a bowl and set aside. Rub the zest from the orange on a fine grater and squeeze out the juice.
  3. In another large bowl, combine yogurt, eggs, sugar, orange zest, vegetable oil, orange juice, and vanilla extract. Add 1 cup cranberries, stir gently. Add flour mixture and quickly knead the dough. Transfer the dough to a baking dish and top with the remaining cranberries.
  4. Place the dish in the preheated oven and bake for 45–55 minutes. Use a toothpick to check if the cake is ready: if you stick it into the cake, it should come out dry.
  5. Remove the finished cake from the pan by lifting it by the edges of the parchment and cool on a wire rack.
  6. For the icing, combine the icing sugar and cream and pour over the cold cake.
