Cucumber Salad with Cauliflower

This lean salad with cucumber and cauliflower, if desired, can be made quickly by replacing the soy mayonnaise with regular one.

  1. Divide the cauliflower into small inflorescences.
  2. Cut the lemon in half, cut 1 half into thin slices.
  3. Boil a large pot of water with lemon slices. After 1 minute add the cabbage. After 5-7 minutes, transfer the cabbage to a large bowl, immediately squeeze the juice from the remaining half of the lemon onto it, pour over with olive oil. Set aside for 10 minutes, during this time stir 3-4 times.
  4. Cut the cucumbers lengthwise into 4 pieces, chop thinly. Fry the nuts in a dry frying pan and chop coarsely with a knife.
  5. To dress the tarragon, remove the stems, chop the leaves, mix with mayonnaise, then, while stirring, add so much carbonated water to the mixture so that the consistency is slightly thicker than that of kefir. Season the mixture with salt and pepper.
  6. Add the cucumbers to the cauliflower, pour in the dressing, stir. Serve sprinkled with walnuts.
