  1. Pour half of the sugar into a saucepan. Pour in 2 tsp. water, put on low heat and, stirring, cook until the sugar is completely dissolved and thickened. Remove from heat. Let the syrup cool. Add softened butter, honey and remaining sugar. Beat with a mixer until smooth.
  2. Add the yolk to the resulting mass, mix well.
  3. Sift flour along with baking powder, salt, cinnamon, cloves, ginger and nutmeg. Mix with creamy mass. Knead the dough.
  4. Transfer the dough to a lightly floured table. Stir for 5-7 minutes. Roll into a ball, wrap in plastic wrap and put in the refrigerator for 1 hour.
  5. Divide the dough into 2 halves. Roll thin flagella 6–7 cm long and 1 cm in diameter from one part. Roll them up in spirals so that the outer tip about 1.5 cm long is “on the fly”.
  6. Roll out the remaining dough into balls with a diameter of 3.5 cm. Stick them with hands moistened with water to the spirals. Form 2 ears on top. Bake in an oven preheated to 180 ° C for 10 minutes. Allow to cool. Make eyes from green candied fruits, and mouths from red ones. Stick them on cat faces using egg white.
