Fish in "crazy water" (from Italian - pesce in acqua pazza) is a delicious, aromatic and bright dish from Italian cuisine. Crazy Water is a vegetable sauce prepared with tomato juice.

  1. First, let's prepare the "crazy water". In a very preheated frying pan, fry coarsely chopped carrots, garlic, crushed with the flat side of a knife and onions (you don't need to peel them, just don't forget to wash them!). Pour in tomato juice, wine, put 2-3 sprigs of thyme. Bring to a boil and cook for 5 minutes. over low heat. Add salt, sugar and pepper. Taste it, it should be delicious for you!
  2. We clean the fish, wash it, season it with salt and pepper. Cut a clove of garlic into thin slices. On the sides of the fish we make small cuts into which we stick a slice of garlic. Put thyme sprigs in the belly of the fish.
  3. We put the fish in "crazy water", put cherry tomatoes around it, add capers. Bring to a boil, reduce heat to a minimum and simmer for 20-30 minutes under a lid until the fish is cooked.
  4. Put the fish, add breadcrumbs to the sauce and boil down to the desired thickness. Pour the sauce over the fish. Bon Appetit!
