  1. Finely chop the fish fillet and onion, lightly salt, pepper and simmer in a pan with butter and 2-3 tbsp. l. water. Remove the mass with a slotted spoon, cool. Grate the cheese on a fine grater, cut the pepper into cubes.
  2. Preheat the oven to 180 degrees. Add yolks, cream and flour to the cooled fish and onion mass, grind in a blender or chopper. Combine this mixture with cubes of bell pepper and cheese, mix. Add whites, whisked into a thick, fluffy foam, stir gently with a spoon so that the whites do not settle in a "top-down" fashion.
  3. Divide the dough into molds no more than 1/2 of the height. Place in a preheated oven and bake at 180-200 degrees for 20-30 minutes. Check the readiness of the soufflé with a toothpick.
