Dorado is my favorite sea fish. It is practically boneless - the meat is white, tender. In winter, I cook it on the stove or in the oven. In summer, charcoal cooking is an upward delight. It prepares quickly, and the delicious food is extraordinary!

  1. Clean the fish, remove the entrails, gills. Salt and pepper.
