Flat potato bread with onions and cheese

For the base of this flat bread, a dough of flour and mashed potatoes is kneaded, and then the bread is baked with onions and cheese.

  1. Peel the potatoes, cut into small pieces and boil in salted water until soft, for 15-20 minutes.
  2. Meanwhile, sift the flour into a large bowl, add yeast and a little salt. Add butter and knead with your hands together with flour, forming crumbs.
  3. Drain the potatoes in a colander, let the water drain, and then transfer the tubers back to the saucepan in which they were boiled and mash until puree. Add mashed potatoes and 300 g of warm water to the flour mixture. Knead a homogeneous dough.
  4. Form a ball out of the dough, put in a bowl, cover with foil and leave in a warm place for 1 hour, the dough should double.
  5. Put the risen dough on a floured surface, add chopped olives, gently knead and divide into 3 parts.
  6. Roll each of the three parts into a roll and then knead with your hands until flat (similar to a long pizza crust). Put the cakes on an oiled baking sheet, cover with foil and put in a warm place for 30 minutes.
  7. Turn on the oven to preheat to 220 degrees. Heat oil in a large skillet over medium-high heat, add onion and fry, stirring occasionally, for about 10 minutes, until golden brown. Remove the pan from the stove, transfer the onion to a paper towel to drain off excess fat.
  8. Sprinkle the risen cakes with onions and cheese, put in a preheated oven. Bake until tender, about 20 minutes.
