Fried Eggs in Vegetables with Herbs

A very hearty and delicious breakfast consisting of sweet peppers, hearty potatoes, fresh herbs and juicy tomatoes.

Ingredients

  1. Peel potatoes.
  2. Wash and peel the seeds and cores from the pepper.
  3. Wash the tomatoes.
  4. Cut vegetables into small equal cubes.
  5. Pour olive oil into a frying pan and heat over medium heat.
  6. Add potatoes, cook for 5 minutes, stirring occasionally.
  7. Add tomatoes and bell peppers, cook for 3 minutes.
  8. Sprinkle with spices (pepper, basil, chopped garlic).
  9. Sprinkle with salt, add tomato paste. Mix.
  10. Make four holes in the vegetable mass, carefully pour the egg into each cavity, try not to damage the yolk.
  11. Reduce heat, add salt to eggs, fry until tender.
