If you have yesterday's boiled rice in the fridge, make this Asian homemade dish from it. You will also need a small piece of bacon, an onion and a couple of potatoes.   1. Boil rice 1 day before or on the day of cooking. To do this, wash the rice, place it in a small saucepan. Fill with boiling water so that the water completely covers the rice above the surface by about 3 cm, add salt, mix. After boiling, cook under a lid on low heat until tender, about 15 minutes. Do not raise the lid until the end of cooking and do not stir the rice.
  2. Then we put the rice in a colander. Cool it down. We send it to the refrigerator (at night or for a while while we are engaged in the rest of the cooking stages).
  3. Peel and wash the potatoes. Dip in boiling water and boil until half cooked, about 7-10 minutes after boiling.
  4. We wash the potatoes with cold water, let them cool.
  5. Cut the cooled potatoes into cubes with a side of about 1.5 cm.
  6. Cut the bacon into squares with a side the same size as the potatoes.
  7. Heat 1 tbsp in a deep skillet or wok. a spoonful of vegetable oil. We spread the potatoes, stirring, fry for 7-10 minutes, until tender and crispy crust.
  8. Transfer the finished potatoes to a plate.
  9. Peel and cut the onion into small cubes.
  10. Put the onion in the frying pan where the potatoes were fried and sauté for about 2 minutes, until soft.
  11. Add bacon to the onion pan and fry together for 1-2 minutes.
  12. Before further cooking, gently knead the chilled rice with your hands to get rid of the formed lumps.
  13. Put the potatoes in a pan with onions and bacon, add salt, ground pepper and cumin.
  14. Add rice and mix. Fry together, stirring occasionally, to warm the rice well. Let's try. Add more salt and pepper if necessary.
  15. Fried rice with bacon and potatoes is ready. Remove the pan from the heat.
  16. We lay out the dish on plates and serve immediately. Fried bacon and cumin add an amazing flavor to the finished dish. Sprinkle thinly sliced ​​green onions over each portion, if desired.
