This dish, an ideal snack or hot, is quick and very easy to prepare, incredibly tasty, for every taste ... But only if you have very fresh fish. Here freshness is the only and main criterion for taste.

  1. Combine in a large bowl - not deep, but not completely flat either - about 1 cup flour with salt and pepper to taste. Salt should be at least 1 tsp, and pepper, in principle, you can not put at all.
  2. Place a large heavy-bottomed skillet or two smaller pans over medium-high heat.
  3. Put butter in the pan - there should be enough to make a layer at least 5 mm deep, preferably a little more.
  4. While the oil is heating up (and it should be hot enough), dip each fish in the flour mixture. Put the rolled fish on the edge of the plate. If there is not enough flour, add more.
  5. Place the fish in heated oil, shaking off excess flour so that it does not burn in the oil, and fry for about 5 minutes, turning once. Serve immediately, with lemon if desired.
