Friko is a delicious northern Italian dish. A kind of potato casserole with cheese and onions. Very high in calories and incredibly tasty !!!

Ingredients

Directions

  1. Peel the potatoes and cut into thin cubes. Place in cold water for 20 minutes. Drain and dry.
  2. Peel the onion and cut into small cubes.
  3. Brown the potatoes in a hot skillet in olive oil. Salt.
  4. Add onion, stir, fry for a couple of minutes.
  5. Add chopped parsley and stir. Fry / simmer until the potatoes are tender.
  6. Grate cheese on a coarse grater. (The amount of cheese should match the amount of potatoes.)
  7. Cut the ham or bacon into cubes or sticks.
  8. Pour half of the cheese into the bottom of a hot skillet.
  9. Place the potatoes on top.
  10. Then the cold cuts.
  11. Now - the second half of the cheese. Reduce heat to low and cover. Cook for about 5 minutes, until the bottom layer of cheese is golden brown.
  12. Turn the friko over with a plate, so that it does not lose its shape, and cook on the other side.
  13. The friko potato casserole is ready. Bon Appetit!
