This garlic keto bread is suitable for soup, salad or vegetable spaghetti, burgers and sandwiches. The bread is cooked in the microwave, which makes the cooking process very quick. Finished bread can be pan-fried for crispy toast.

  1. Place almond flour, baking powder and sea salt in a deep bowl and blend to combine.
  2. Chop the cheddar cheese, peel the garlic, and pass it through a garlic press (or finely grate).
  3. Add half the grated garlic to the dry mixture along with the egg, olive oil and cheddar cheese.
  4. Whisk until blended, transfer dough into a small round or square microwave-safe mug, then microwave for 90 seconds on high power.
  5. Set the pan aside to cool the bread for 2-3 minutes.
  6. While the bread is cooling, melt the butter in a separate bowl.
  7. Heat a skillet over medium heat.
  8. Whisk the remaining grated garlic in melted butter and set aside.
  9. Free the bread from the pan (slide a thin knife between the bread and the edge of the pan), turn the pan over to get the bread.
  10. Cut the bread in half, horizontally, so that you make two slices.
  11. Brush the top of each slice with garlic oil (save half the oil), sprinkle with grated Parmesan on top (save half the Parmesan).
  12. Place the slices of bread in a hot skillet so that the buttery side cooks first. Fry the bread in a hot skillet for 1-2 minutes, until the bread is golden brown.
  13. Spread the remaining garlic oil between the tops of the bread, spread the cheese evenly, and then turn the bread over.
  14. Fry until the other side is golden brown, about 1-2 minutes.
