Gazpacho tomato soup in sweet pepper cups

  1. In a large bowl, combine the first 8 ingredients and blend with a hand blender. * If you prefer the soup with chunks, do not chop it completely. If you like a smooth soup, chop the vegetables appropriately. Stir in olive oil and vinegar. Add bread crumbs, tomato water, salt and pepper. Chill the soup for 4-8 hours before serving, so that it is infused. For extra flavor and original serving, peel 6 bell peppers and use them as soup bowls.
  2. Tomato water: In a blender, combine the tomatoes and salt and chop on high speed until smooth. Place a piece of cheesecloth in a sieve and let the water seep through slowly. Save the liquid. Exit: about 1 tbsp.
