  1. Cut leafy greens into thin strips. Heat the oil in a heavy-bottomed saucepan. Add flour and cook over medium heat, stirring vigorously, 1 minute.
  2. Add vegetables, mix thoroughly, cook for 1 minute more. Pour in broth and salt. While stirring, bring to a boil. Reduce heat and cook for 5 minutes.
  3. Whisk eggs with curdled milk and finely chopped cilantro. Pour the resulting mixture into a saucepan with constant stirring. Bring to a boil and remove from heat.
  4. Divide the "porridge" into bowls and sprinkle with finely grated cheese. Season with salt and pepper. Stir. Sprinkle with chopped nuts and serve hot.
