Fried smelt is so good that you can eat it like seeds - quickly and imperceptibly. We recommend stretching the pleasure and making a yoghurt sauce for it, which goes well with the fresh, slightly cucumber taste and aroma of northern fish.

  1. To clean the smelt from scales and entrails (do not forget to remove the gills, if this is not done, then the fish will taste bitter). Rinse the fish, dry it, pepper and pour over with olive oil.
  2. On a preheated grill, fry the fish until golden brown on both sides.
  3. Finely chop the gherkins, parsley and garlic, add yogurt to them and mix well.
  4. Put the finished smelt on a plate and lightly pour over the yoghurt dressing. Serve the remaining dressing separately.
