  1. First, we wash my milk mushrooms, clean them of the leaves-needles, the husband famously copes with this with the help of a toothbrush. It is recommended to soak these mushrooms in water for 2-4 days to get rid of the milky juice, it gives bitterness. Change water 2-3 times a day.
  2. When all the manipulations with soaking are done, we proceed to the preparation of the milkweed. To be honest, I also cooked soup from milk mushrooms, which were soaked for only a couple of hours. Yes, there is a little bitterness, but it is not at all disgusting and gives a special piquancy to the Georgian woman. In addition, the taste of vegetables and sour cream successfully smooths it out. However, the choice is yours.
  3. Grate the carrots, chop the onion. Fry them lightly in a pan. Do not fry until golden brown, otherwise they will kill the taste of the milk mushrooms. Let it be just slightly soft.
  4. Cut the milk mushrooms into strips (or whatever you want). You can even pound them into gruel with a crush. Yes, there is such a Siberian recipe. Do not boil the milk mushrooms in advance, put them raw in the soup! Like all mushrooms, they greatly decrease in volume when boiled, keep this in mind.
  5. We send the milk mushrooms to a saucepan with broth (or water as a lean option). I have chicken broth in this case. Cook the milk mushrooms for 15 minutes from the moment of boiling. We remove the foam.
  6. While the mushroom broth is being cooked, let's prepare for the further preparation of the milk mushroom. Peel and cut the potatoes into pieces.
  7. We wash and cut tomatoes and herbs. I have small tomatoes, I just cut them in half.
  8. We send potatoes and vegetable frying to the broth. Cook the potatoes until cooked.
  9. Five minutes before cooking, put tomatoes, bay leaves and chopped greens in the milk jug. We taste and, if necessary, salt and pepper.
  10. Let the Georgian woman brew for about 15 minutes, and you can invite everyone to the table.
