Semolina Vegetable Pie is a wonderful aromatic and delicious Gujarati dish. Gujarat is a state in western India where the majority of the population is vegetarians. Therefore, it is not surprising that the pie is lean. However, one must bear in mind that the composition includes sour cream or natural yogurt. Therefore, if you are fasting strictly, postpone cooking until light days or the end of the fast. If before that you were sure that only sweet manna can be made from semolina, you will be pleasantly surprised by this recipe.

Ingredients

Directions

  1. Pour a handful of peas, green beans into a bowl, grate the carrots there on a coarse grater, add paprika, mix everything. You do not need to defrost them in advance. If using fresh beans, trim off the ends of the ponytails, cut the pods into 3 pieces, and toss them into a bowl.
  2. Mix semolina in another bowl with yogurt or sour cream, baking powder, put vegetables in it, mix thoroughly so that no dry grains of semolina remain, set aside.
  3. In a deep frying pan or stewpan, heat any vegetable oil, pour mustard and cumin seeds there, wait until bubbles appear on the surface of the oil and the sizzle of the grains, pour the resulting aromatic mixture into a mixture of semolina with vegetables, mix well. The consistency should be as thick as sour cream.
  4. Pour the pie into a mold, put in an oven preheated to 200 degrees, bake for 30 minutes. Check readiness with a toothpick - it should come out dry. It is not necessary to grease the mold with oil first - the cake will not stick to the walls due to the presence of oil in its composition. Sprinkle sesame seeds on the cake 5 minutes before baking to brown.
  5. Serve chilled for tea or as a snack. Well, with chutney, of course))
