  1. Prepare the dough. Rinse the lemon thoroughly in hot water. Dry. Remove the zest.
  2. Sift flour.
  3. Grate cold butter on a coarse grater.
  4. Beat the egg and sugar until the sugar is completely dissolved.
  5. Combine with flour.
  6. Add lemon zest, butter and ground ginger.
  7. Knead a soft homogeneous dough. Wrap with cling film and leave for 15 minutes at room temperature.
  8. Prepare the filling. Soak gelatin in cold water.
  9. Meanwhile, put red currants in a saucepan, add fruit Mistral sugar, water and bring to a boil.
  10. Then remove the mass from the heat, grind with a submersible blender in mashed potatoes. And rub through a fine sieve.
  11. Add the swollen gelatin to the resulting warm puree. Put on fire. Warm up, stirring, until the gelatin is completely dissolved. Remove from heat and cool the currant filling to room temperature.
  12. After 15 minutes, roll out the dough between two sheets of parchment into a layer 4 mm thick.
  13. Cut out the hearts with a larger shape. Set half aside.
  14. And spread the other half on the work surface. Using a smaller mold, cut out the middle hearts from them.
  15. Place the resulting "frames" on the set aside blanks and press down slightly to fix. This is the basis for cookies with sides.
  16. Cover the baking sheet with baking paper. Put the blanks and send them to the preheated oven (180 degrees). Bake 15-20 minutes until creamy. Remove the cookies from the oven. Cool to room temperature on a wire shelf.
  17. Arrange the currant filling (cooled) into the resulting cookie bases. Put in the refrigerator until the jelly hardens completely.
  18. Red currant hearts are ready to serve
