This delicate, airy and fragrant honey cake is made with butter cream and boiled condensed milk. To treat yourself and your loved ones to such a delicious cake, of course, it will take some time to roll out and bake the cakes, but the cream is prepared easily and quickly. Honey cake with boiled condensed milk cream turns out to be quite sweet and very soft - it literally melts in your mouth!

  1. We prepare the necessary products. We take the butter out of the refrigerator in advance so that it becomes soft.
  2. In the process of cooking, you will need parchment paper.
  3. We take a pan with thick walls. Butter cut into large cubes. Put the butter in a saucepan, add sugar and honey. You can also use dishes with thin walls - then you need to prepare the mixture in a water bath.
  4. We put the pan on the fire and, constantly stirring with a whisk, heat everything to about 60-70 degrees, until the mixture becomes homogeneous.
  5. Then add soda and cook for another 1-2 minutes.
  6. When the mixture turns white and begins to foam, remove the pan from the heat.
  7. Let the mixture cool until warm. While the mixture is cooling, it must be stirred occasionally. Whisk the eggs into the cooled mixture one at a time.
  8. Beat with a mixer until smooth.
  9. Add some flour.
  10. We begin to knead the dough with a mixer.
  11. When it becomes difficult to mix with a mixer, continue kneading the dough with your hands. The finished dough should not stick to your hands. Do not leave the dough for a long time, as it can harden even more and it will be difficult to roll out.
  12. Immediately divide the dough into 9 equal parts.
  13. Roll out the dough on parchment paper to a thickness of about 2 mm.
  14. Turn on the oven to heat up to 200 degrees.
  15. Using a template, plate, bowl or lid, mark a circle on the dough. Cut off the excess edges of the dough with a knife.
  16. I got this circle with a diameter of 22 cm.
  17. We often prick the cake over the entire area with a fork and put it on a baking sheet together with parchment.
  18. Bake the cake in a preheated oven for 4-5 minutes. The cake should change color a little. We do the same with the rest of the test.
  19. We also roll out a thin cake of any shape from scraps of dough. And bake it at the very end - you will need it to sprinkle the cake.
  20. We stack the finished cakes in a pile and leave to cool.
  21. Cooking cream. If you use liquid boiled condensed milk, then first beat the softened butter, and then, gradually adding condensed milk, beat the mixture until creamy. My boiled condensed milk is very thick, so I combined condensed milk and softened butter. Condensed milk and butter should be approximately the same temperature.
  22. With a mixer, beat the butter with condensed milk until creamy. If the cream is too thick, add 15-30 ml of warm milk.
  23. We spread the cake with the inner (more loose) side up.
  24. We evenly soak each cake with milk (about 1.5 tablespoons)
  25. Then we apply cream.
  26. The cream is evenly distributed over the surface.
  27. We cover with the second cake and so we collect the whole cake.
  28. Lubricate the last cake with cream.
  29. We break the cake remaining for sprinkling into pieces and combine with walnuts. A few whole nut kernels can be left to decorate the cake.
  30. Grind nuts and pieces of cake with a blender into crumbs.
  31. Sprinkle the cake with prepared crumbs, decorate with nuts and send it to the refrigerator for several hours. I left it in the refrigerator overnight.
  32. Honey cake with boiled condensed milk cream is ready.
  33. Cut the cake into portioned pieces and serve with tea or coffee.
