  1. Prepare all the food you need. We need squid carcasses. They are usually sold frozen, so thawing them properly is essential. Immediately after the freezer, place the carcasses in the refrigerator, where the temperature is +5 degrees for 6 hours. Then continue defrosting at room temperature. With this defrosting, the product will retain a maximum of nutrients.
  2. Step 2. Also, the squid must be well cleaned. I already have half-peeled squid. But in the unpeeled version, first of all, you need to remove the upper thick pink skin - I just have the carcass after it has been removed. But after that, you also need to remove another thin transparent skin and remove the insides. For easier skinning, use hot water - underneath it can be easily removed with a stocking. Also keep in mind that there is skin inside the calme carcass.
  3. Step 3. Next is a very important process of cooking squid. First, boil water in a saucepan, add a little salt to it. When the water boils, dip the peeled squid skins into it. Cook the squid for no more than 2 minutes, preferably 1.5 minutes. If you overcook the squid, it will be tough, rubbery. And in order for it to become soft again, you will need to cook it for another 2 hours. Keep this in mind!
  4. Step 4. Take out the skins, drain the water and cool slightly. Use a thin, sharp knife to cut the boiled squid carcasses into rings.
  5. Step 5. Pour lemon juice over the rings as desired. If you squeeze juice directly from a lemon, rinse it well with very hot water beforehand - this way the lemon will give much more juice. You can also use ready-made lemon juice from factory production.
  6. Step 6. Pepper squid rings - any ground pepper will do: black, white, red, and pepper with lemon and garlic aromas.
