Under the delicate crumbly dough, there is a fragrant, thick, sweet filling of freshly made pineapple jam, so it is absolutely impossible to eat just one cookie.

  1. To prepare the filling of the cookies - pineapple jam - cut off the top and bottom of the pineapple with a large sharp knife, place the pineapple upright and cut off the peel.
  2. Remove all "eyes" with a small knife. Chop the pineapple pulp randomly, place in a blender or food processor and puree.
  3. Pour the puree into a heavy-bottomed saucepan, add the cinnamon and heat over medium heat. Cook the jam, stirring frequently to prevent it from burning, until most of the liquid has evaporated, about 20 minutes.
  4. Add sugar, stir and cook, stirring constantly, until the pineapple caramelizes and the mixture becomes thick and dark golden brown. Transfer the pineapple jam to a bowl and cool completely, 1 tsp.
  5. For the cookie dough, place the butter softened at room temperature in a deep bowl. Pour in sugar, add yolks and milk powder. Beat with a mixer until fluffy.
  6. Add flour and starch in portions, stirring with a spatula. You should have a firm, elastic dough that makes cookies easy to form.
  7. Tear off pieces the size of a medium plum from the dough and knead with your hands into a cake about 5 mm thick.
  8. Place about 1/2 teaspoon in the center of the cake. jam, gather the edges over the filling, seal and then roll between your palms into an even ball, forming a cookie.
