Tacos, a traditional Mexican dish, is prepared with a wide variety of fillings and in many different ways. Only the serving is unchanged: well flavored with sauce (most often salsa or guacamole), tacos are served in a round wheat or corn tortilla, like Jamie Oliver's mackerel tacos.

  1. Fillet the mackerel.
  2. Crush the garlic, cumin, fennel and ½ tsp in a mortar. sea ​​salt in a thick puree. Stir in chili flakes, paprika and 1 lime juice, then dilute with a generous serving of olive oil. Use a sharp knife to cut crosswise notches on the skin of the mackerel at 1 cm intervals, being careful not to cut through the meat. Spoon the spice mixture onto the fish and rub gently into the incisions. Place the fillets skin side down on a baking sheet and set aside.
  3. For the guacamole, cut the avocado in half lengthwise, remove the seeds, remove the skin, and fold into a blender. Add lemon (lime) juice, cilantro leaves, crush everything together, then salt.
  4. In the meantime, coarsely chop the tomatoes, cilantro and chili to make the salsa. It is convenient to do this on a large board while chopping and stirring vegetables at the same time. Add a small pinch of salt and pepper and drizzle with olive oil.
  5. Brush the fillet with vegetable oil on both sides and fry on a well-heated grill for a couple of minutes on each side so that the skin becomes crispy and the meat is baked.
  6. Mix the yogurt with the juice of 1 lime. Heat the tortillas on the grill and place in plates. Place the fillings and herbs on top. As soon as the fish is ready - put it in the cakes and serve immediately!
