Karelian trout is a small fish, but tasty. There is no excess fat in it and it is convenient to serve it in portions, especially if you add some interesting ingredients. Try baking a celery tuber, mixing finely chopped cilantro with cranberries, and serving with the fish.

  1. Cut the celery root into thin strips, season with cream and wine, season with salt and pepper, put a clove of garlic and a couple of thyme sprigs. Put on a baking sheet and bake for 20 minutes at 180 C.
  2. Fry the fish in vegetable oil in a hot pan with salt and pepper to taste. First fry on the skin side, then on the fillet side (it is important not to overexpose). As soon as the fish begins to whiten on the inside in the cut, you can serve it.
  3. Serve the fish with celery, pre-mixed with cilantro and cranberries.
