Keto ice cream mascarpone with strawberries

Strawberry keto mascarpone ice cream is a rich, creamy dessert with a slight astringency from fresh berries. Homemade condensed milk gives this dessert a creamy taste. To add fat to the ice cream, mascarpone cheese is used, which has a mild taste and a low carbohydrate content.

  1. Add coarsely chopped strawberries to a food processor or blender bowl, purée, and set aside. You can use chopped strawberries to keep the pieces of berries in the finished ice cream.
  2. Combine 2.5 cups heavy cream, sweetener, and butter. Heat in a small saucepan and simmer for 25 minutes, stirring frequently.
  3. Turn off heat, add mascarpone, remaining heavy cream and vanilla extract to the creamy mixture. Let cool slightly, then stir in the strawberry puree. If using the freezer for cooling, add additional pieces of berries right away. If using an ice cream maker, add berry pieces at the end.
  4. Pour ice cream into a bowl, chill until completely cooled in the refrigerator or at room temperature, cover and send to the freezer until completely solid.
  5. If using an ice cream maker: Cover the bowl and chill in the refrigerator for 1-2 hours, or until completely cooled. Then pour the mixture into the bowl of the ice cream maker and mix according to the instructions. If using strawberry chunks, add them 5 minutes before the end of the whisk. Then put it in the freezer until it solidifies.
  6. Let the ice cream stand at room temperature for a few minutes before serving.
