Most sources agree that knysh is a dish of Belarusian cuisine. But wherever the knys are born, the taste of these pies is incomparable. The filling for knyshey patties can be different. I am bringing a knish with potatoes to your judgment.

  1. Sift flour into a volumetric bowl, add baking powder, add salt. Using a spoon, turn the ingredients into a homogeneous mixture, stirring everything well.
  2. In another container, make a liquid mixture: pour water, break an egg, add vinegar and add vegetable oil. Mix everything with a whisk.
  3. Pour the prepared liquid mixture to the dry components. Let's knead the dough.
  4. The dough is very elastic. Let us cool the dough for about 20 minutes in the refrigerator, after wrapping it with cling film.
  5. Peel the potatoes, put them in a saucepan, fill them with water. Let's put it on fire. After 20-25 minutes from the moment of boiling, it will be cooked (over moderate heat).
  6. Chop the onion finely.
  7. Fry the onions in vegetable oil preheated in a pan.
  8. Put the hot boiled potatoes in a bowl. Add the fried onions there along with vegetable oil.
  9. Crush the potatoes with onions. The potato filling is ready.
  10. Put half of the chilled elastic dough (after removing the film) on the work surface of the table, which has been slightly sprinkled with flour. Roll out the layer with a rolling pin. The size of the sides of the seam is approximately 30x40 cm.
  11. Close to one of the edges, lay out half of the filling, as shown in the photo.
  12. Gently roll it up.
  13. Divide the formed roll into 6 parts with a knife.
  14. We take in hand one part. We pinch the edges on both sides and slightly press the pinches with our fingers. It turns out a kind of barrels.
  15. We perform the same manipulations with the remaining parts of the dough and filling.
  16. We spread each formed knish pie on a baking sheet covered with parchment. Shake the yolk of the remaining egg with 1 teaspoon of water and grease all the knobs.
  17. We put a baking sheet with pies (we got 12 knishes) in a preheated oven (temperature 200 degrees) for about 30 minutes. A sign of the readiness of the knives with potatoes is a very appetizing golden crust.
  18. Serve the finished knys with potatoes slightly cooled.
