Kutabs with potatoes and pumpkin

Ingredients

Directions

  1. Make a well in the sifted flour (360 g). Pour water (hot) with salt and oil into it.
  2. Knead into a smooth dough, adding a little flour.
  3. Place the dough in a bowl lightly oiled with vegetable oil, cover and leave for half an hour.
  4. For the potato filling, fry the finely chopped onion.
  5. Combine the fried onions with the crushed boiled potatoes. Season with salt, pepper, add chopped dill, mix.
  6. For the pumpkin filling, sauté the chopped onion and garlic.
  7. Add the grated pumpkin and simmer until tender.
  8. Season the pumpkin filling with salt and pepper. Add chopped parsley.
  9. Divide the kutab dough into 10 parts.
  10. Roll into a cake.
  11. Spread the filling over half of the tortilla.
  12. Cover the filling with the other half of the tortilla
  13. Blind the edges of the dough.
  14. Fry the unleavened dough in a dry hot skillet until browned.
  15. Lubricate the finished kutab (tortilla with a filling) with oil or sprinkle with water.
  16. Prepare the rest of the kutabs with potatoes and pumpkin in the same way.
