Kutia is a traditional Russian dish for the festive Christmas table. Also, this dish is popularly known under such names as Kolivo, Kanun, Syt, Sochivo.

  1. Grind the wheat. The correct step is to crush the wheat grains with a wooden pestle in a mortar, periodically sprinkling with a little warm water, but other means can be used.
  2. Separate the kernels from the husks, then sift thoroughly and rinse. Boil a loose, lean liquid porridge in water from pure grains, cool and sweeten to taste.
  3. Grind the poppy seeds until a specific milk is obtained, add honey and combine with wheat. If the porridge is too thick, then it can be diluted with cool boiled water. Next, add the crushed walnuts.
  4. Juice can also be made from rice. We leave the ratio of the components exactly the same. Cooking rice: pour rice with 1 1/5 cups of boiling water, cover the pan with a lid (tightly), cook the rice for 3 minutes over high heat. Then we continue to cook the rice for 6 minutes over medium heat, 3 minutes over low. We remove from heat and let it steep under a closed lid for another 12 minutes.
