The pleasant sourness of the berry filling perfectly sets off the sweetness of the almond cookies.

Ingredients

Directions

  1. Mix sugar and pectin well. Puree the berries in a blender.
  2. Put the berry puree on the fire. Stir with a whisk and bring it to a boil. Add sugar and pectin, simmer for 2-3 minutes.
  3. Spread the confit in a thin layer. Tighten the surface with cling film (close to the berry layer). Refrigerate until solid.
  4. Separate the whites from the yolks 3-4 hours before cooking the almond halves. Cover the bowl of egg whites with a napkin and set aside at room temperature.
  5. Sift the almond flour and icing sugar several times. Large particles must be weeded out. Add half of the proteins (55 g) to the mixture.
  6. In a saucepan, combine sugar and water. Add liquid or gel food coloring if desired. Bring the mixture to a boil. Continue to heat until the syrup reaches 118 degrees. Use a cooking thermometer to read the temperature.
  7. While the syrup is heating, beat the second part of the proteins (55 g) into the foam. While whisking, pour in the syrup in a thin stream. Whisk until the mixture is cool and smooth and shiny.
  8. Add whipped whites to the almond mixture. Stir gently with a silicone spatula while rotating the bowl in a circle with the other hand.
  9. Fold the dough into a culinary bag with a round nozzle, 8-10 mm in diameter. Place in even circles on a baking sheet lined with parchment.
  10. Leave them at room temperature for 1 hour. When a noticeable dense crust forms on the surface, the biscuits can be baked.
  11. Preheat oven to 140 ° C. Bake the cookies for 15-17 minutes. Remove the baking sheet, let the liver cool completely.
  12. Fill a pastry bag with the filling and place it on the pasta halves, covering with the other half. Refrigerate in an airtight container overnight.
