  1. Cut the mackerel into two fillets, removing the bones and ridge. Coarsely chop the nuts.
  2. Cut the carrots into long thin strips or a spaghetti slicer. Saute in olive oil with garlic, rosemary, pepper and salt for 5 minutes. Add vinegar at the end.
  3. Grease the fish fillets with olive oil, lightly pepper and salt, roll in nuts (on one side). Place on a baking sheet lined with parchment. Bake in an oven preheated to 200 degrees for 4-5 minutes.
  4. Place the carrot salad on a serving plate (remove the garlic), place the fillets on top and serve. Parsley and lemon will be appropriate. Enjoy your meal!
