  2. Line the bottom of the pan - wok with foil, add rice, sugar and tea on top, stir.
  3. Rinse the salt off the fish gently and pat the mackerel dry with a paper towel. Place the fish on a small wire rack and place over the skillet so that it does not come into contact with the rice.
  4. Cover the fish with a lid or foil, turn the cooker hood to maximum and place the pan on medium heat for 10-12 minutes until the fish is well smoked.
